We traveled through a series of locks in the canal. At each lock, we could get off and walk around if we wanted to. We could also get off and walk along the canal to the next lock to get back on the barge again. |

Because there was no smoker on board, he smoked the foie gras in a pan. Birch sawdust, fresh marjoram, fresh thyme, star anise, and black tea. He put the pan on the stove on high, and lit the fire with a propane torch. |

After this step, he put the foie gras on a rack, then covered the pan with a lid. He sealed the whole thing up, and set aside for about 4 hours. The final product was very unique! |

The Marjorie II has a 13-passenger van that the used to ferry us from the barge to towns for sightseeing and shopping. We even went golfing one day! |
